ingredients

12 ounces cooked shrimp, peeled and deveined
1 egg white, lightly beaten
2 teaspoons cornstarch
1 teaspoon minced fresh ginger
1/2 teaspoon salt
6 thin slices white bread
3 tablespoons melted butter
minced fresh cilantro or parsley leaves, optional
toasted sesame seeds, optional

directions

Preheat the oven to 400 degrees F.

Place the peeled shrimp in a food processor and process until finely chopped. Add the egg white, cornstarch, ginger, and salt to the food processor. Process for a few seconds until the ingredients are well mixed.

Cut the crusts from the slices of bread. Brush both sides of the bread slices with the melted butter. Cut each slice into 4 triangles or quarters. Place the bread triangles on a baking sheet.

Spread each of the bread triangles evenly with the shrimp mixture. Place the baking sheet in the oven and bake at 400 degrees F for 10-12 minutes or until lightly browned and bubbly.

Remove the shrimp toast from the oven and sprinkle them with chopped cilantro and sesame seeds, as desired.

Serve the baked shrimp toast immediately.
