Traditional Balsamic Vinegar of Modena is a D.O.P. product produced from the fermentation in to vinegar of only Cooked grape must (or grape juice) for a minimum of 12 years and then must be inspected and certified and packed by the consortium for Traditional Balsamic Vinegar of Modena as a D.O.P. product. Our private label “Vecchia Modena” balsamic vinegar is fruity and acidic and is wonderful on salads or in marinades for meat, fish & poultry.
