You guysโฆMinnesota is in a heat wave. I mean literally. This is not normal for this time of year! We usually have single digit or at the most teens and snow on the ground this time of year. But the snow has melted and the high for today is going to be in the 50โs! What?!?!
I love it, but my goodness is it getting unusually warm lately. I hate to say it, but I kinda miss my snow storms and winterโฆ.ha no Iโm not, totally just joking there. This weather reminds me of warmer times and warmer times mean ice cream. Especially this spring flavored Lemon Poppyseed Ice Cream.
Technically we are all year round type of ice cream people, we donโt discriminate on the grounds that itโs cold outside. Ice cream is one of those treats that can be enjoyed year round. Can you believe that for many years our local Dairy Queen would close down in the winter months because they didnโt think ice cream was a necessary winter treat?
Yeah, itโs hard to believe. I think they smartened up in these years because they are open all year round now. But who needs Dairy Queen when you can make your very own ice cream at home? I got an ice cream maker last summer and Iโve been meaning to put it to good use. Iโve made some fun no churn ice creams like this Apple Crisp Ice Cream and Monster Cookie Ice Cream, but it was time to make the machine type.
If you donโt already have an ice cream maker, I highly recommend running out and buying one. This is the one that I have right here and I adore it! There are so many different types and styles these days that you pretty much have yourself the pick of the crop when it comes to machines. Anything from the old school to the really high-tech!
Ok getting back to this amazing Lemon Poppyseed Ice Cream. I adore lemon poppyseed bread, like ADORE it. Itโs one of my favorite โspringyโ flavors. So obviously I had to turn that flavor into one of our favorite frozen treats! And if youโve never tried lemon ice cream before, oh man you guys are missing out.
So this whips up in no time. You can literally eat it right out of the ice cream machine for some really soft serve. I like to add it to a dish and freeze it for a firmer texture, but man was it hard to not just devour it right out of the drum. Literally, lemon flavoring is epic!
What setโs this apart is the lemon zest right in the ice cream. You could totally strain out the zest, but I donโt like to because it give the ice cream such a rich lemon flavor that you literally cant quit spooning into your mouth. I think it has just the right lemon flavoring. Itโs a nice burst of springtime right in your mouth!

Lemon Poppyseed Ice Cream
Ingredients
- Zest of 2 lemons
- Juice of 2 lemons
- 1 cup sugar
- 3 eggs
- 1 1/2 cup heavy whipping cream
- 1 cup whole milk
- 1 tsp vanilla
- 1 Tbs poppyseeds
Instructions
- In a pan on your stove mix together your lemon zest, lemon juice, sugar and eggs then stir in your milk and vanilla and mix until blended.
- Heat on medium and stir constantly until simmering and slightly thickens, remove from heat.
- Cover with plastic wrap and refrigerate until cool.
- Once cool stir in your heavy whipping cream and pour into your ice cream making adding your poppyseeds and turn on and mix according to manufacturers directions.
