One of my guilty pleasures is Trader Joe’s gorgonzola gnocchi. The gnocchi is tender & the sauce is a-maze-ing. But there is more sauce than I use for the gnocchi, so I always have some left over.

So to repent for carbo loading on the gnocchi, I “repurposed” the remainder of the sauce with one of my latest favorites – riced cauliflower. I sauteed onion, mushrooms & riced cauliflower, then added the sauce chips at the end, just long enough to melt them. The result was very similar to a risotto & very tasty. Now, all I need to do is find a good copycat recipe for the sauce. Otherwise, I’ll end up buying the TJ’s gnocchi for the sauce chips. Or at least that’s my story & I’m sticking to it.
