There’s nothing that can beat the incredible flavor of pecan pie, and these mini pecan pies are every bit as delicious, just in a smaller size. These would be great served at Thanksgiving or Christmas, you can give them as gifts, or else just make them whenever you want to indulge your sweet tooth or surprise the family.

These pretty mini pies are also great for box lunches or a grab-and-go breakfast when you’re in the mood for something sweet.

Homemade piecrust dough or boxed dough works to make these little pies, and you’ll also need butter, egg, sugar, corn syrup, vanilla, and of course the pecans.

A pinch of salt also goes into the mix and this really brings out the sweet flavor, which is why a touch of salt often features in sweet recipes. Perhaps you already have all of these ingredients in the fridge and pantry. If not they’re easy enough to source.

Why You’ll Love the Recipe:
Just as delicious as regular pecan pie but a smaller version, these mini pecan pies are well worth making. They’re sticky, sweet and offer that perfect pecan crunch and flavor.
How to Serve Them:
One of these makes a tasty dessert after your main course, and they’re good served with some whipped cream or a scoop of ice cream.

Ingredients:
- Light corn syrup
- Melted butter
- Brown sugar
- Egg
- Vanilla
- Refrigerated homemade pie crust
- Pecans
- Sugar
- Pinch of salt

How to make Mini Pecan Pies:
Heat the oven to 350 degrees.
On a flat lightly floured surface, roll out the two pie crusts. Use a glass or cookie cutter that is about 3.5 inches wide to cut 6 circles from each of the crusts.

Press the circles of dough into the 12 sections of a well greased muffin tin.

Blend together the light corn syrup, melted butter, brown sugar, egg, vanilla, sugar, salt and pecans in a mixing bowl, and stir to combine well.

Place 1 ½ Tbsp of the filling into the center of each cup of the muffin tin.

Bake for 25 minutes, or until browned and cooked through.
Let cool to room temperature before removing from the tray and serving.

These individual pies are really tasty and they’re cute too. Why not tuck into one of these instead of cutting a slice of a larger pie? Add some ice cream or whipped cream for a picture-perfect dessert.
