
Steps
- Preheat the oven to 375°F (190°C).
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Rub the herb mixture all over the rabbit leg.
- In a baking dish, place the chopped carrot and potato, then lay the rabbit leg on top.
- Pour vegetable broth into the dish, covering the vegetables.
- Cover the dish with foil and roast in the oven for 45 minutes.
- Remove the foil and roast for an additional 15 minutes to brown the rabbit.
- Let rest for 5 minutes before serving with the roasted vegetables.
