
Special occasions need a special dish to celebrate with. Veg paneer sizzler is one such gourmet dish that makes a special moment even more memorable for me.
It is a very famous Indian sizzler dish that is served on a hot sizzler plate with assorted seasoned roasted veggies, potato wedges, fried rice, and grilled paneer. A spicy and savory sauce is then poured over the plate which gives its sizzling effect.
The cooking process might seem elaborate but bear in mind that a sizzler plate is a complete meal with entrée and side dish items. This recipe simplifies the cooking process, fried rice is made in the instant pot, and veggies are roasted in the air fryer.
Trust me, it is very much worth the effort for those special days and occasions.
Veg sizzler ingredients
Veg sizzler uses a variety of ingredients like paneer, vegetables, sauces, rice, spices, and seasonings. Most of the ingredients are basic and easily available in the pantry.
Vegetables used in sizzlers include potatoes, bell peppers, onions, baby corn, and carrots. You can use other vegetables such as broccoli, asparagus, or any of your favorite ones at hand.
It is best to cut the vegetables about ¾ to 1 cm wide. I like to cut them while the rice is soaking for making fried rice. Fried rice can be made from scratch in the instant pot, or from leftover rice.
You can make paneer at home in the instant pot, a day before, or simply use the store-bought one. Cut the paneer into slices about a centimeter thick and then make large chunks of 2 inches in size.

How to make fried rice in instant pot?
In order to make sizzlers, it is best to start making the fried rice first in the instant pot. You can cook other items while the fried rice is getting cooked.
Rinse and soak basmati rice for 30 minutes. Turn the instant pot on saute mode and once it is hot, add some oil. You can use regular cooking oil or sesame oil.
Once the oil is hot, add the lower white part of green onion followed by carrots and green beans. Saute for about a minute and add salt, sugar, black pepper, soy sauce, and vinegar and mix it well.

Add the water and deglaze the pot with a spatula. Finally, add the basmati rice (discard the soaked water) and mix for the final time.
Press cancel to come out of the saute mode and lock the lid with the pressure valve in sealing position. Select high-pressure mode by pressing the pressure button or manual button and adjust the time for 1 minute.
Allow the pressure to release naturally by letting the silver pin drop naturally. Open the lid and fluff the rice with a fork, garnish with green onions.
How to make potato wedges in air fryer?
Making potato wedges in the air fryer is fairly easy. First, peel and cut potatoes into wedges of about a centimeter in width.
In a mixing bowl, mix the oil, salt, red chili powder, and black pepper with the potato wedges. Coat the wedges evenly.
Roast the potato wedges in the air fryer for about 15 minutes at 390 °F.

Roast vegetables in air fryer
Slice a few bell pepper, onions, baby corn, carrots, and any other veggies of your choice to about a centimeter width. Coat them well with a mixture of oil, salt, and pepper.
Roast the veggies in the air fryer for about 10 minutes at 390 °F. The veggies should have some crunch.
How to grill paneer for sizzlers?
While the veggies are roasting in the air fryer, mix the paneer cubes with some oil, salt, turmeric, powder, coriander powder, and chili powder.
Heat a skillet, I prefer the Lodge cast iron skillet, on medium heat. Put a little oil and then place the paneer on the skillet. Cook it on both sides for a few minutes until it is golden brown.

Making sizzler sauce
Before making the sizzler sauce, start heating the cast iron sizzler plate on medium heat. By the time the sauce is ready, you will be ready to arrange the sizzler plate.
Heat a saucepan on medium heat and add some oil. Once the oil is hot, add onions, ginger, garlic, optionally green chilies (as per taste) and saute them until onions are translucent.
Add the dark soy sauce, red chili sauce followed by water, salt, sugar, and black pepper.
While the sauce comes to a boil, prepare the cornstarch slurry by mixing cornstarch and water. Let the sizzler sauce boil for a few minutes and then add the cornstarch slurry until you get desired consistency.
How do you serve on the sizzler plate?
Before serving on the sizzler plate, you must ensure it is heated well for 10-12 minutes on medium heat. Also, you must keep the heat on while arranging the sizzler plate.
The food served on the sizzler plate must be hot, you can quickly reheat the veggies, potatoes, or paneer in the microwave if needed.
To ensure that the food does not burn on the hot sizzler plate, place a few cabbage leaves on it.

Serve the fried rice at the center. To get a good shape of fried rice, grease a small bowl with oil. Fill the bowl compactly with fried rice and then carefully invert the bowl on the sizzler plate.
Place some potato wedges on one side and the roasted veggies on the other side with the help of kitchen tongs.
Place a few pieces of grilled paneer on top of the fried rice. The Sizzler plate is now arranged and the final step is to add the sizzler sauce.
How do you get sizzling effect in sizzler?
The final step is to get the sizzling effect. Ensure that the sizzler plate is still on the stove on medium flame. If you turn it off while arranging the plate, there won't be any sizzling effect when you pour the sauce.
Carefully pour a few spoons of sizzler sauce on the sides of the sizzler plate and on top of the fried rice and paneer. You will see the sizzling effect.
Now you can turn off the flame and place the hot plate on its wooden base.

Veg Paneer Sizzler
Ingredients
For potato wedges
- 2 medium Potato (peeled, wedges, 375 grams)
- 1 tablespoon Oil
- ⅛ teaspoon Red chili powder
- ¼ teaspoon Salt
- ⅛ teaspoon Black pepper
For roasted veggies
- 1 Red bell pepper (¾ cm thick slices)
- 1 Orange bell pepper (¾ cm thick slices)
- 1 Green bell pepper (¾ cm thick slices)
- ½ cup Baby corn (cut, halved)
- ½ cup Onion (¾ cm thick slices)
- 2 tablespoon Oil
- ½ teaspoon Salt
- ⅛ teaspoon Black pepper
For grilled paneer
- 200 grams Paneer (sliced into 2 by 2 inch pieces)
- 1 tablespoon Oil
- 1 teaspoon Coriander powder
- ⅛ teaspoon Red chili powder
- ¼ teaspoon Turmeric powder
- ¼ teaspoon Salt
For fried rice
- 1 cup Basmati rice (soak for 30 minutes)
- 2 tablespoon Oil
- 1 cup Carrots (finely chopped)
- 1 cup Green beans (finely chopped)
- ¼ cup Green onion whites (chopped)
- ¼ cup Green onion greens (chopped)
- 1 teaspoon Dark soy sauce (tamari sauce for gluten-free)
- 1 teaspoon Vinegar
- 1 teaspoon Organic cane sugar
- 1 teaspoon Salt
- ¼ teaspoon Black pepper
- 1 cup + 3 tbsp Water
For the sauce
- 1 tablespoon Oil
- ½ cup Onion (finely chopped)
- ¼ cup Green onion whites (chopped)
- 2 tablespoon Garlic (chopped or paste)
- 1 tablespoon Ginger (chopped or paste)
- 1 teaspoon Vinegar
- 1 tablespoon Dark soy sauce (or tamari for gluten-free)
- 1 tablespoon Chili sauce (to taste)
- 1 teaspoon Organic cane sugar
- ½ teaspoon Salt (to taste)
- 3 cup Water
- ¼ cup Green onion greens (chopped)
- 1 ½ tablespoon Corn starch (for slurry)
- 3 tablespoon Water (for slurry)
For sizzler plate
- 2 - 3 count Cabbage leaves
Instructions
- Rinse and soak basmati rice for 30 minutes.
- Chop all the required veggies while rice gets soaked.
- Preheat the air fryer to 390 °F for 5 minutes.
Make veg fried rice in instant pot
- Turn the instant pot on Saute mode normal setting.
- Once the instant pot is hot, add oil to the instant pot container.
- Once oil is hot, add green onions (white part) followed by carrots and green beans
- Saute for about a minute and add salt, sugar, pepper, soy sauce, and vinegar and give it a mix.
- Add water and deglaze the pot with a spatula.
- Add the soaked rice and give it a mix. (discard the water used for soaking)
- Press cancel to come out of the saute mode.
- Lock the lid and turn the instant pot on high-pressure mode for 1 minute with the pressure valve in sealing position.
- Allow the pressure to release naturally.
- Open the lid and fluff the rice with a fork, garnish with green onions.
Air fry potato wedges
- Mix all the ingredients together (from potato wedges* ingredients).
- Air fry for 15 minutes on 390 °F.
Air fry veggies
- Mix all the ingredients together (from roasted veggies* ingredients).
- Air fry for 8-10 minutes on 390 °F.
For grilled paneer
- Mix all the ingredients together (from grill paneer* ingredients).
- Cook on a hot skillet for 2-3 minutes on both sides until golden brown.
Heat the sizzler plate
- Heat a sizzler plate on the stovetop on medium heat for 10-12 minutes while you prepare the sizzler sauce.
Making sizzler sauce
- Place a saucepan on the stove on medium flame.
- Add oil, once oil is hot, add onions, onion whites, ginger, and garlic and saute until onions are translucent.
- Add soy sauce, chili sauce, water, salt, sugar, and mix well.
- Boil the sizzler sauce for about 5 minutes.
- Prepare a cornstarch slurry by mixing water and cornstarch and ensuring there are no lumps.
- Pour the cornstarch slurry in the sizzler sauce, a teaspoon at a time, until you get the desired consistency.
- Allow the sizzler sauce to boil for a minute, add onions greens, and take off the flame.
Arranging sizzler plate
- Keep the heat on and place cabbage leaves on the sizzler plate.
- Place 1 cup of fried rice at the center of the sizzler plate.
- Arrange some potato wedges on one side.
- Arrange some roasted veggies on another side.
- Place a few grilled paneer pieces on top of fried rice.
- Pour a few spoonfuls of sizzler sauce and allow to sizzle.
- Turn off the flame and serve the sizzler plate on the wood base.
