Delicious sweet plantain pie recipe

If you love plantains as I do, you’ll enjoy the creative ways I’ve prepared this versatile food. I enjoy experimenting with plantains to create recipes that soothe the soul and delight the palate. I recently posted a plantain roll recipe that you may also find interesting and tasty. I’ve also created an oven baked plantain dish; panko breadcrumbs crusted sweet plantain and plantain pancakes. Today, I want to share one of my comfort foods with you—the fried plantain pie recipe.
Last week, I had a very severe family crisis that I needed to address. Although it’s still ongoing, with comfort foods like sweet plantain pie, big world problems become more manageable. Over the weekend, I decided to prepare my sweet plantain pie and coupled it with my favorite ice cream, vanilla. We enjoyed it so much that I prepared two.
When I make this sweet plantain pie recipe for the kids, they prefer it to be a bit more sweet. So I usually add sugar and cinnamon to the pie crust before adding the plantain slices. Since I wanted to please everyone, I omitted the sugar and cinnamon on the crust for mine and only added it with the butter as a glaze and let it get through the cracks. For the kids, I added the sugar to the crust, before adding the slices, and also added the sugar, butter cinnamon mixture to the pie as well.

Equipment
- Frying pan
- cutting board
- Baking pan or skillet
- Brush
- pizza slicer or knife
Ingredients
- 6 ripe plantains The riper they are the better. Not over ripe or soggy
- 1 box pie crust I used Pillsbury pie crust
- 1/4 cup butter You'll need some to add a light coat in the piecrust, to grease pan and spread over the pie to bake.
- 3½ tbsp sugar If you're adding sugar to the crust, you'll need to set aside 1½ tablespoon sugar. If you're only going to add it to the pie, then you'll need 2 or adjust to your preference
- 2 tbsp cinnamon if you're using the cinnamon on the crust with the sugar, you'll use 1 tablespoon and the other for the sugar, butter cinnamon mix, to brush over the pie
Instructions
- Peel plantains
- Slice plantains diagonally
- Fry plantains for 3-5 minutes
- Drain plantain on paper towel
- Cut pie crust dough (approximately 3½ inches wide, with a pizza slicer or knife
- Melt some of the butter and lightly brush on the dough
- You can add some of the sugar and cinnamon mix to the crust or since the sweet plantain may be very sweet, you can choose to only spread the mixture with butter over the entire pie
- Add slices so they are overlapping each other, at the top of the pizza crust, allowing them to slightly hang over the crust
- Fold the other half of the crust over the plantains
- Roll the crust and the plantain into each other
- Place it in a skillet or pan until the pan is completely full
- Melt remaining butter, sugar and cinnamon in a saucepan
- Brush a generous amount of the melted butter cinnamon and sugar (leave a little for later)
- Pre heat over at 400° F
- Place pie in oven
- Bake for 30 minutes
- Remove from oven and brush the remaining melted butter solution on the pie
- Put in the over for another 3-5 minutes on broil
- Remove and enjoy warm with a side of ice cream or plain

Notes
- Folks who have dietary restrictions, use the amount of sugar you’re comfortable using. When you’re preparing for others, keep in mind that some people may prefer their desserts sweet.
- Sweeter plantains work best for this recipe.
- You can tent cover the pie with foil for a little while so that the plantain doesn’t burn and the crust can get a bit more brown.
- The pie tastes better warm.
- Fun fact: this makes a great Thanksgiving side dish or dessert.
