Ingredients
- 6 almond flour tortillas
- 1 (16.2-oz) pkg frozen veggie crumbles
- 1 green bell pepper, chopped
- 1 onion, chopped
- 2 Tbsp olive oil
- ⅓ cup ketchup
- 1 Tbsp brown sugar
- 1 Tbsp Dijon mustard
- 1 Tbsp apple cider vinegar
- 2 tsp Worcestershire sauce
- 1 head butter lettuce, leaves separated
- ¾ cup freshly shredded Cheddar cheese
Instructions
- Preheat oven to 350°F. Arrange tortillas in a single layer on a parchment-lined baking sheet. Lightly coat tortillas with cooking spray. Bake 6 to 8 minutes or until crisp and browned.
- Meanwhile, cook crumbles, bell pepper, and onion in hot oil in a large skillet 10 to 12 minutes or until crumbles are throughly heated. Stir in ketchup, sugar, mustard, vinegar, and Worcestershire. Cook 5 minutes or until slightly thickened.
- Top each tortilla with lettuce; spoon crumbles mixture over lettuce, and sprinkle with cheese.
