Desi Daaru also known as Desi Sharaab, Desi Liquor, Deshi Daru or Country Liquor[1] is an indigenous alcoholic drink made in Indian subcontinent, prepared from recipes passed down since centuries. It is mainstay alcoholic beverage for India's village population and urban poor. It is fermented and distilled from any fruit that has high sugar content, for example Orange, Papaya, Banana, Pineapples.[2][3][4] Desi liquor is a broad term and it can include both legal and illegal made local alcohol. Term desi daru usually refers to legal alcohol while other types of desi liquor (arrack and palm toddy) can come under category of Moonshine alcohol.[5][6]

Term Desi is often used to describe things related to South asian/Indian diaspora. Daaru is an indigenous term used for any alcoholic beverage in India. Term Desi daaru is often used as opposite to English whisky.[7]

Preparation

Desi liquor is essentially made of rectified spirit (RS) which flows from fermenting and rectification of molasses. It may not undergo distillation, and certainly not multiple distillation as in the case of IMFL, leaving it with a higher content of untreated or low quality alcohol. This could induce an instant kick in a mal-nourished or under-nourished consumer, which the segment mainly caters to.[4]

Social status

Desi liquor being the cheapest alcohol of India is the mainstay alcoholic beverage for village population and urban poors. Desi daru is less commonly consumed for "social" purpose, it is more commonly consumed for purpose of quick intoxication.

In village area, desi daru has been blamed for reason behind domestic violence and poverty in the family. There has been several protests against desi liquor shops/bars in villages. There are usually separate bars for desi daru and may not be available in mainstream bars.[8][9][10]

Adulterated/Premixed Indian liquors

There has been issues in many bars in India where Scotch/English whisky was adulterated by mixing some quantity of Desi liquor in it before serving it to customers.[11]

Though risk of health hazards is associated with all kinds of alcohols still desi daru can sometimes be more hazardous than others as it doesn't undergo multiple distillation process.[12][13] In India, where few are able to afford licensed liquor, deaths from drinking illegally brewed cheap alcohol, locally known as desi daru are common.[14] In October 2013, approximately 42 people died after they consumed desi daroo which was made for major religious celebration in Azamgarh district, Uttar Pradesh.[15] According to CBSNews, in July 2009, tainted home-brewed liquor claimed 86 deaths - mostly poor workers living in slums in western India.[14]

Industry

Most of the Desi liquor business in India is unrecorded. The Lancet Magazine points out that nearly two-thirds of alcohol consumed in India could be desi made liquor.[16] Globus spirits mentioned that India's desi liquor market is about 242 million cases (over 30% of the beverage industry in India) with a growth rate of about 7% per annum.[17]
