Strawberry Cool Whip Pie No Bake Dessert

Quick and easy strawberry Cool Whip pie with a graham cracker crust and fluffy filling. Retro no bake dessert recipe with sweet berry flavor in every bite!

Lately, I find myself craving true no bake desserts like lemon icebox pie, strawberry fluff salad, raspberry cheesecake and this chocolate delight dessert. Not sure if it's because the weather is warm, or because I'm feeling a little lazy in the kitchen these days.

Either way, Jello pie is something you can enjoy year round, both during the dog days of summer or smack dab in the middle of the holidays.

It's truly quick and easy to make (besides the chill time). And it's deliciously creamy, filled with strawberry flavor both from the Jello and the fresh strawberries.

All it takes to make strawberry fluff pie is mixing gelatin with water, adding whipped topping, and stirring in the chopped strawberries. That's it. Isn't it wonderful?!

When it comes to no bake pies, strawberry cream cheese pie rates right up there with strawberry Jello pie in my book.

INGREDIENTS YOU'LL NEED:

  • Graham cracker crust – though we'll talk about other options below.
  • Boiling water
  • Strawberry Jello
  • Cold water and ice cubes
  • Cool Whip – You can also use homemade whipped cream.
  • Fresh strawberries – I highly recommend fresh over frozen strawberries. For one thing, hey'll look prettier; they'll also taste better and not come with quite as much moisture, which could compromise the set up of your pie.
  • Berries, for garnish – Sliced strawberries, blueberries, blackberries, and raspberries.

Keep in mind, all of the ingredient amounts youโ€™ll need are in the printable recipe card below.

KITCHEN TOOLS AND EQUIPMENT YOU'LL NEED:

Tea Kettle – for boiling water. We use an electric kettle.

Pyrex Glass Measuring Cups

Fruit and Vegetable Chopper

Large Bowl and Whisk and Spatula

Pie Plate and Pie Server

LET'S TALK CRUST OPTIONS…

Before you get started making your strawberry pie, you need to decide what type of crust you want to use.

Personally, I like to use a graham cracker crust for ease and flavor; you can choose to bake it or not bake it, in this case, not bake. Better yet, buy it already made in the store.

But I also don't mind a regular single pie crust, which I usually make gluten-free with my favorite gluten-free flour.

In addition, you have a ton of other really delicious options for your crust:

  • Pecan Sandies crust โ€“ Make it like you would a graham cracker crust.
  • Vanilla Wafer crust โ€“ like a graham cracker crust.
  • Golden Oreo crust โ€“ again, like a graham cracker crust.
  • Pecan nut crust โ€“ or buy a store bought crust and press pecans into it.
  • Store bought crust

Just be sure to make your crust ahead of time, so it's all set and ready to go.

HOW TO MAKE STRAWBERRY COOL WHIP PIE

Since this is no bake, there's no need to pre-heat anything, but I do suggest you gather all your ingredients and measure them out before you get started. That way you're familiar with the recipe and can can through each step without interruption.

Once you've gathered everything, just follow these steps to make the fluffy strawberry filling…

  1. In a large bowl, add boiling water to the gelatin mix, stirring at least 2 minutes until all the gelatin is completely dissolved.
  2. In a separate measuring cup, add ice cubes to the cold water to make 1 cup; then stir it into the gelatin mixture, stirring until thickened. Remove any unmelted ice cubes.
  3. Whisk in Cool Whip until well blended.
  4. Stir in the chopped strawberries.

Refrigerate the filling for 20 to 30 minutes. Then spoon the filling into the crust, and at this point, cover and chill the pie for at least 6 hours, or overnight.

When it's thoroughly chilled, you can slice it, garnish it with berries and an extra dollop of whipped cream, and serve. So yummy and so refreshing!

IS STRAWBERRY GELATIN THE SAME AS STRAWBERRY JELLO?

Just to clarify in case there's any confusion, strawberry gelatin and strawberry Jello are one and the same. You'll find different brands of gelatin or Jello, but gelatin and Jello are the same thing.

SPEAKING OF JELLO, CAN I MAKE THIS WITH MORE FLAVORS?

Of course! Whatever your favorite flavor of Jello happens to be, you can make a Jello pie with it.

Something to keep in mind… Certain flavors will skip the fresh fruit because, for example, grapes aren't as conducive to pie, as strawberries are.

But the sky's the limit when it comes to making a Jello Cool Whip pie. Think raspberry, lemon, berry blue, strawberry, cherry, lime, orange, grape… Sky is the limit.

CAN I USE HOMEMADE WHIPPED CREAM?

Sure you can! If you'd rather use homemade whipped cream instead of Cool Whip, you can totally do that.

While I haven't tried it, I'd also think you can use Dream Whip if it's all you have on hand.

I prefer to use Cool Whip because the point is to make a quick and easy dessert, and it doesn't require me to mix anything up. It's ready to go, and I don't have to do a thing.

HOW TO STORE JELLO COOL WHIP PIE

Be sure to cover the pie and store it in the refrigerator if not eating right away. Any leftovers should be refrigerated due to the cream filling.

And yes, you can freeze this easy strawberry pie. In fact, you can put it in the freezer for a few hours, and then serve it as a frozen treat!

Just be sure to cover it well and store it in an airtight pie container so it doesn't get freezer burn. It should keep for up to 2 months in the freezer if you want to freeze it long term.

Ingredients

  1. Question, is it really 3oz of jello mix? Or .3oz?
    I just made this tonight and seen 1 box in the ingredients when shopping….I was looking for sugar free jello (I did sugar free jello, sugar free cool whip and a pecan crust)when I shopped and the boxes were .3oz where regular jello was 1oz…so I bought and used 3 x .3oz… wondering if I just ruined the pie lol can you please clarify for me next time? Thanks!

    I made this yesterday. It was such a nice treat! We’re watching carbs/sugar intake, so it was reasonable. I want to make a peach version if I can find a sugar-free peach Jello.

    Oh, I noticed Vootman has a nice line of sugar-free cookies/biscuits which might work for the pie crust. I plan on checking them out this week.
