What Is Sriracha
Sriracha is a fermented hot sauce, with medium level heat. It consists of various red chiles, distilled vinegar and garlic. Named after Si Racha, a city of in Thailand, this spicy condiment is widely used in many Asian cuisines.
In our neck of the woods (San Diego) it’s referred to as “Rooster sauce” due to the rooster visual on the bottle.
A good substitute, since Sriracha has been hard to find lately, is Sambal Oelek.
What Is Aioli
Technically, this is Sriracha mayo, not an Aioli. Why? Classic aioli is an emulsion of olive oil yielding a thick, rich and aromatic condiment. It’s not a mayo-based sauce. However, in recent years in our part of the world the two terms are used interchangeably.
More than likely when you order something with “aioli” on it in the United States (at bar & grills, etc.), you’ll get a mayo based sauce.

Sriracha Mayo vs Yum Yum Sauce
Both have mayonnaise as a base, but that’s where they start to differ. Sriracha Aioli utilizes Sriracha to add the heat while Yum Yum Sauce is mild in flavor and gets the red color from a combination of ketchup and paprika.
Despite these differences they can actually be used interchangeably.
