LOW CARB PIZZA CASSEROLE

INGREDIENTS
  • 1 tablespoon Olive Oil
  • ½ teaspoon Salt
  • 2.5 ounces Pepperoni
  • 8 ounces Mushrooms, sliced
  • 1 Green Pepper, cut into bite-size pieces
  • 12 ounces Mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, powdered
  • 1 teaspoon Italian Seasoning
  • 14 ounces Cauliflower florets, cut into bite-size pieces
  • 2 pounds Italian Sausage, if in casings remove from casing before cooking
  • 1.5 cups Low Carb Pasta Sauce, we use Rao’s Homemade Marinara

INSTRUCTIONS

First, Steam cauliflower. Place the cut cauliflower in a microwaveable bowl with 1 cup of water. Cover with a damp paper towel and microwave at maximum power for about 3 minutes or until cauliflower is tender. Do not overcook!

Then, Drain the cauliflower with a paper towel. Put aside.

Preheat oven to 400 degrees F.

In large skillet, cook Italian sausage for about 15 minutes over medium-high heat. Once cooking is complete, drain excess fat. Put aside.

In the same skillet, add the olive oil and sauté mushrooms over medium-high heat for 10 minutes to remove excess water. Set aside when you're done.

Prepare a 13 × 9-inch stew dish by spraying with a nonstick spray and then spread ½ cup of pasta sauce on the bottom.

In a large bowl, add cauliflower, cooked Italian sausage, mushrooms and green peppers. Stir until all is well mixed.

Spread half of the mixture in the casserole. Cover with ½ cup of pasta sauce, followed by ½ pepperoni (like squeezing them between the other toppings) and finally 6 ounces of mozzarella cheese.

Then spread the remaining filling mixture over the cheese, then the pepperoni (keep 10 slices for the top of the pan), the remaining ½ cup pasta sauce and 6 ounces mozzarella cheese.

In a small bowl, combine Parmesan cheese and Italian seasoning.
Sprinkle the parmesan mixture over the casserole and garnish with 10 slices of pepperoni.

Put in the oven and bake for 30 minutes or until the pan is hot and the cheese is completely melted. Happy Cooking Time.
