i have already posted the simple soya bean curry recipe, but i was getting several requests for this simple soyabean chunks fry recipe, soya chunks chili fry and soya chunks manchurian recipe. i personally prefer to have soya chunks fry recipe compared to gravy one. however, my husband always prefer to have a gravy based curry hence i end up preparing it most of the time. basically, i learnt this recipe from one of my close friend. actually she had invited for dinner and meal maker fry recipe was one of the starter. i was really impressed with the idea and without any hesitation i asked for the recipe so that i can share it sometime.

Ingredients
- 2 cups soya chunks
- 3 tsp oil
- 1 tsp cumin / jeera
- 1 medium sized onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 inch ginger, finely chopped
- 1 capsicum, finely chopped
- 2 large tomatoes, finely chopped
- ½ tsp turmeric powder / haldi
- 1 tsp kashmiri red chili powder / lal mirch powder
- ½ tsp coriander powder / dhaniya powder
- ½ tsp cumin powder / jeera powder
- salt to taste
- ½ tsp aamchur powder / dry mango powder
- 2 tbsp coriander leaves, finely chopped
Instructions
- firstly in a kadai heat oil and add cumin seeds.
- saute till the cumin seeds turn aromatic.
- further add finely chopped onions and continue to saute.
- also add garlic, ginger and saute till the raw smell disappears completely.
- additionally add finely chopped capsicum and saute for a minute.
- now add finely chopped tomatoes and saute.
- saute till the tomatoes turn soft and mushy. you can alternatively use tomato pulp to make slightly gravy.
- also add turmeric, chili powder, coriander powder, cumin powder and aamchur. instead of aamchur use lemon juice.
- saute well till the oil starts to release from masala.
- now add squeezed soya and required salt.
- give a good mix making sure the spices are combined well.
- cover and simmer for 5 minutes so that soya absorbs all masala.
- finally, serve soya subzi garnished with coriander leaves along with chapathi.
how to make soya chunks fry or meal maker fry with step by step photo:
- firstly, in a large vessel take enough water and add in soya chunks.
- furthermore, cover and boil for 8 minutes, stirring in between.
- once the soya is cooked drain off the water and transfer to a bowl of cold water.
- allow to rest for 10 minutes and rinse multiple of times with clean water.
- further, squeeze off the soya chunks to remove the absorbed water and keep aside. make sure to squeeze water else they wont absorb masala.
- now in a kadai heat oil and add cumin seeds.
- saute till the cumin seeds turn aromatic.
- further add finely chopped onions and continue to saute.
- also add garlic, ginger and saute till the raw smell disappears completely.
- additionally add finely chopped capsicum and saute for a minute.
- now add finely chopped tomatoes and saute.
- saute till the tomatoes turn soft and mushy. you can alternatively use tomato pulp to make slightly gravy.
- also add turmeric, chili powder, coriander powder, cumin powder and aamchur. instead of aamchur use lemon juice.

notes:
- firstly, make sure to cook soya well and squeeze off the water. else they might be causing indigestion and smell bad as they are rich in protein.
- furthermore, make tomato puree to make gravy kinda sabzi.
- additionally, add a tbsp of milk while cooking soya to remove the smell from soya chunks.
- finally, squeeze off the water from soya chunks before adding to soya chunks fry or meal maker fry.
