You guys! I have done it. I know you’re not really supposed to use the word moist with food but there’s no other word to describe this banana bread. My Super Moist and Delicious Banana Bread!! It’s so good!
New Addition to Our Family
If you’ve been watching my stories, you know we have a new puppy, Coco. She is a mini labradoodle and is the sweetest little thing. She’s still potty training but she can sleep through the night in her crate from 9pm to about 5:30am. Not going to lie, I am exhausted but we are very happy with her and she’s a smart and good puppy.
We had some ripe bananas and Madeline suggested that we make banana bread. This is one of Phoebe’s, my oldest, favorites! If I can bake this banana bread while sleep deprived and a little delirious, then you can too!

Super Moist and Delicious Banana Bread
Ingredients
- 8 tablespoons (1 stick) unsalted butter at cool room temp
- 2/3 cup light brown sugar
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 3 small to medium sized bananas mashed, about 1 1/2 cups
- 1/3 cup applesauce no sugar added
- 2 tablespoons honey
- 2 large eggs
- 2 1/4 cups all-purpose flour
- 1 fresh banana sliced in half lengthwise
Instructions
- Preheat your oven to 350 degrees and line a baking loaf pan with parchment paper and spray.
- Using a stand mixer fitted with the flat beater or paddle attachment, combine the butter, sugar, vanilla, cinnamon, nutmeg, baking soda, baking powder, and salt, beating until smooth. Add in the mashed bananas, applesauce, honey, and both eggs, again beating until smooth. Add in the flour and beat again just until all combined.
- Pour the batter into the prepared loaf pan and smooth the top with a butter knife or spoon. Arrange the sliced banana on top, gently pressing into the batter just slightly. Let it rest at room temperature for 3 to 5 minutes. Bake the banana bread for 1 hour, or until a tester inserted comes out clean.
- Allow the bread to cool for 10 minutes in the pan. Remove it from the pan, and cool it completely on a rack. Slice and enjoy!
