Makes 4-6 fritters
Ingredients:
- 1 medium zucchini
- 1 large green onion
- 1 large egg, lightly beaten
- 3/4 cup grated cheese, like cheddar, mozzarella, gouda, or a blend
- 1/2 teaspoon minced garlic
- 1/2 teaspoon mixed Italian seasoning
- 1/2 teaspoon baking powder
- Kosher salt and freshly ground black pepper to taste
Directions Wash zucchini and trim the ends. Grate the zucchini into a colander in the sink and squeeze out the excess water. Place the zucchini in a mixing bowl. You should have about 1 1/2 cups of grated zucchini.
Add the egg, cheese, garlic and seasoning to the bowl. Season lightly with salt and pepper. Mix to combine.
Heat a large skillet over medium-high heat. Add 1-2 tablespoons sunflower or canola oil. When the oil is hot, add a 1/4 cup of batter to the pan for each fritter. Cook for 2-3 minutes or until the fritter is browned. Carefully flip using two spatulas and cook on the other side for another 2-3 minutes.
Serve immediately with your choice of garnish.
