This garlic steak recipe is a really simple and delicious way to cook a steak. The inspiration behind this one actually came from a teppanyaki restaurant I went to. Instead of fresh garlic, they used garlic chips to cook the steak. The garlic chips add a ton of flavor which I decided to garnish with as well for extra texture.
Tips for making garlic steak – garlic chips
Use a mandolin: Slicing our garlic as even as possible will ensure that they cook evenly. That is why I would highly recommend using a mandolin to slice the garlic. I use the thinnest setting. If you don’t have a mandolin, a knife works as well, it might just take a bit longer to cut.
Don’t let the oil get too hot: Since the garlic is extremely thin, I would not go past a medium heat while cooking. Better to be patient than burn all the garlic. The temperature I keep the oil around is 240F.
Continue to stir: The garlic chips have a tendency to stick together at the start. This is why using chopsticks to stir while they are cooking in the oil is ideal for even cooking.
Use enough oil: Make sure there is enough oil to completely cover all the garlic. I used 1.5 cups of corn oil. If the oil isn’t covering the garlic, they wont cook evenly and you will be left with chips that are half cooked.
What type of steak to use?
For this recipe, I would highly recommend a striploin steak. There is great flavor without sacrificing much in texture. Of course you could use more expensive cuts like a ribeye or filet mignon, but they are much more expensive. I think the striploin steak is the perfect cut for this recipe.
What is Maggi seasoning?
Maggi seasoning is a rich, dark, and umami sauce that looks similar to soy sauce. It is incredibly rich so a little goes a long way and it includes MSG for that extra umami kick. This ingredient is optional but it will take your steak to the next level.
Garlic Steak
Ingredients
Steak
- 1½ lbs striploin steak
- 1 tsp salt
- 2 tbsp butter
- 1½ tsp soy sauce
- ½ tsp Maggi seasoning
- ¾ cup garlic chips
- 1 bunch chives
Garlic chips
- 10-15 cloves garlic
- 1½ cups neutral oil
Instructions
Garlic chips
- Thinly slice all of your garlic cloves using a mandolin or knife.
- Add oil into a saucepan along with the sliced garlic cloves.
- Turn up heat to medium.
- Allow it to cook for 10-15 minutes while stirring until the garlic chips are golden brown.
Steak
- Cut steak into 1 inch cubes.
- Season with salt.
- Preheat your pan over high heat.
- Add 1½ tbsp of oil into the pan.
- Sear the beef for 1-2 minutes on each side.
- Add butter, 3/4 of your garlic chips, soy sauce, and Maggi seasoning.
- Stir for 1 minute and immediately remove.
- Garnish with remaining garlic chips and chopped chives.
