Viking Food

 Good morning,

My Honey, Kjell, was born and grew up in the oldest Viking town in Norway.

Vikings are known for their love of potatoes and hi-fat meats.  Of course, these things kept them warm and fed in their cold climate.

A treat that I make for Kjell is potatoes cut to bite size pieces, placed in a baking dish, sprinkled with olive oil, covered with one package of Lipton Dry Onion Soup Mix, tossed to cover potatoes with olive oil and soup mix, and baked at 350 for 45 minutes.

Then I remove from oven to add sausage (this is Polish sausage) that I've cut into bite size pieces and return it all to the oven for another 15 to 20 minutes.

I like to eat mine with a side of apple sauce.  Yum!

Yes, it is not healthy.  Yes, it tastes delicious.  No, we don't have it very often.

Playing at the Dog Club

 Good morning,

Catherine took Elsa (pictured) and Lily to the dog club yesterday to play on the agility equipment.  Actually, they were there training, but the pups think of it as playing.  They have so much fun!

Thanks for the image, Catherine.

All the best,

Lois

Lemon Butter Dill Salmon

 Good morning,

This was a quick and easy dinner that was also delicious.

Lemon Butter Dill Salmon is just what the name says.  In an ovenware dish I poured just enough lemon juice to cover the bottom of the dish, added two portions of salmon skin down, a thin sprinkling of lemon juice on the fish, added pats of butter, then dill.

I preheated the oven to 350 F, covered the dish, and baked for 35 minutes.

It was perfectly flaky and delicious!

Yum!

All the best,

Lois

Happy Birthday Number One Son

 Good morning,

Yesterday was number one son, Les', birthday so Catherine, Kjell, and I took him to lunch at Izzy's.

I just had to have Izzy's Famous Reuben, a potato pancake, and apple sauce.

Oh, yes, this was good!

Happy Birthday, Les!

Love you,

Mom

Bath Time for Elsa

 Good morning,

I was sitting in the living room when Elsa came running down the stairs wearing her purple bathrobe.  Catherine had given her a bath and Elsa came down to dry off.

She had brought me a toy and was so excited that she wouldn't hold still so I could get a picture that wasn't blurry.  I snapped several pictures and this was the least blurry one.  :)

She was so happy!  Labs love water.

Sweet!

Downtown Cincinnati

 Good morning,

Kjell took today's images when we had an appointment in downtown Cincinnati.  We were on the 19th floor of the First Financial Building.

The image above is of Procter & Gamble World Headquarters.  Behind the towers is Mount Adams.  The church on the right side of the picture is Holy Cross - Immaculata.  We've attended wedding in this pretty old church.  The modern building in the center is Highland Towers Apartments;  what a gorgeous view they have!  The famous Rookwood Pottery is also atop Mt. Adams.  We are happy to have a Rookwood fireplace in our 100 + year old home.

This is a view of the Ohio River.  You can see why the bridge is locally known as the Big Mac Bridge.  We are in Ohio;  that is Northern Kentucky on the other side of the river.
Here is a wider view of the Ohio River.

Lovely, isn't it!  We are having beautiful weather for a few days.  That certainly makes up for the horrible snow and cold we have had for the past three weeks!

All the best,

Lois

A Gorgeous Winter Day

 Good morning,

We had beautiful weather in Cincinnati yesterday.  It was sunny and the temperature stayed above freezing for a full 24 hours.  The snow in our front yard is about gone, but we still have snow in the back yard where we get little sunshine.

I took the above image as we were almost home from the post office yesterday morning.  We were passing Xavier University which has been building and expanding faster than I can keep up with the changes.  I graduated from XU many years ago, but the place certainly has changed since I was there.

We live across the street from XU a couple of blocks away and around the corner from where I took this image.  It's a lovely neighborhood.

Happy Winter!  I hope the weather is pleasant wherever you are.

All the best,
Lois
