I have a thing for layered cookie bars…but they are always so much work! But these are so easy to throw together. And so FABULOUS!
The Kentucky Derby Pie is a creation of George Kern of the Melrose Inn in Prospect, Kentucky and it became a tradition of days at the Kentucky Derby.
These cookies bars are all that deliciousness in a “pick-up and eat me” square.
Begin by making a shortbread crust by cutting butter into the flour, powdered sugar and salt.
Press the dough into a 9×13″ pan and bake for 15 minutes.
Make the filling by mixing the butter, brown sugar, flour and salt.
Beat in the eggs and vanilla with a mixer.
Stir in the chocolate chips and nuts and pour over the crust.
BAKE!
These are best chilled so that they set up. Cover and refrigerate for 3-4 hours.
SERIOUSLY DELICIOUS!

Kentucky Derby Bars
Ingredients
Crust
- 2 cups flour
- ½ cup powdered sugar
- ½ tsp salt
- 1 cup butter, soften
Filling
- ½ cup butter, melted & cooled
- 2 cups brown sugar
- 1 cup flour
- 1 tsp salt
- 2 tsp vanilla
- 4 eggs
- 2 cups chocolate chips
- 2 cups walnuts, chopped **or pecans
Instructions
- Preheat oven to 350°.
Crust
- Mix flour, powdered sugar and salt. Use forks or pastry cutter to mix in the butter. Mix until it is the texture of crumbly sand.
- Pour into a 9×13 inch baking dish. Press evenly on bottom of dish with hands or the back of a spoon.
- Bake for 15 minutes.
Filling
- Mix melted butter, brown sugar, flour and salt.
- Beat in the eggs and vanilla with electric mixer.
- Stir in the chocolate chips and chopped nuts.
- Poor over crust and gently spread with a spoon.
- Bake for 35-40 minutes. Cool on rack for about 10 minutes.
- Cover and refrigerate for 3-4 hours. Cut and serve.
