I love a yummy, healthy Fall dinner. Especially one that I can make in the morning before it gets crazy at night and everyone is starving. I typically share Paleo recipes on my blog. Because that is what we eat. Now don’t get me wrong, we do not eat this way 100% of the time. But it is the goal. My kids do eat all the regular things kids eat (i.e.- Nutella!). But I eat really close to Paleo all the time. I just feel my best self. I know it is not for everyone. That is why I am sharing this EASY Paleo Fall Dinner recipe- Paleo Pumpkin Chili AND Paleo Bread! I want to show you that eating Paleo is really basic, easy and probably how most of your dinners look anyways- meat and veggies. Also this is another week of “Taste of the Season” hosted by my friend Ella Claire this week is all about PUMPKIN! Pumpkin is actually something I cook with all year long. I don’t just reserve it for the Fall. I added it to our tacos the other night and my husband and kids gobbled them up. When I asked them if they knew pumpkin was in them they said “no…but why did you feel the need to add it?” ha! Well I used it to thicken up the mixture and also pumpkin as so many health benefits not to mention another veggie so why not!
Pumpkin is really good for your heart health. It has a lot off fiber, potassium and vitamin C! All the more reason to love Fall and pumpkin.
I actually went to a chili cooking class years ago. I think the teacher made 6 different chili recipes. My favorite was the Pumpkin Chili and it was a favorite of everyone I went with.
I make it all the time so I thought I would share it. I changed it a little bit to fit our taste buds and adjusted it to be a Paleo Dinner!
Paleo Pumpkin Chili Recipe
Paleo Pumpkin Chili
Ingredients
- 1 Onion chopped
- 1 lb Ground Turkey or Beef
- 1 15 oz can Pumpkin Purée
- 2 cups Chopped Carrots
- 1 28 oz can Diced Tomatoes
- 1 7 oz can Tomato Sauce
- 2 tbsp Cumin
- 2 tbsp Chili Powder
- 2 tbsp Coconut Sugar
- salt and pepper to taste
Optional
- 1 15 oz can Black Beans rinsed
- 1 15 oz can Kidney Beans rinsed
Instructions
- In a large frying pan on medium heat, sauté the ground meat until thoroughly browned.
- Place in crockpot.
- In the same pan, sauté onions until translucent and then place in the crockpot.
- Add remaining ingredients to the crockpot and stir.
- Cook on low for at least 8 hours.
- Garnish with avocado, cheese and or sour cream.
Chili in a mug just feels appropriate and extra cozy. Especially if you get an initial mug for everyone in your family. (Find my mugs HERE).
