Inulinaza (EC 3.2.1.7, inulaza, indoinulinaza, endo-inulinaza, eksoinulinaza, 2,1-beta-D-fruktan fruktanohidrolaza) je enzim sa sistematskim imenom 1-beta-D-fruktan fruktanohidrolaza.[1] Ovaj enzim katalizuje sledeću hemijsku reakciju
- Endohidroliza (2->1)-beta-D-fruktoznih veza inulina
