Whatever the reason….These Almond Bacon Cheddar Tortilla Roll Ups taste like a million bucks.
In case you’ve been living under a rock, the Super Bowl is coming up soon.
Will you be hosting a game day viewing party?! I, for one, love the party-hosting part even more than the football-watching part. Although, I must admit I love gathering friends and family together and getting in the spirit for a common cause, rooting for their favorite football team.
Neiman Marcus Dip aka Almond Bacon Cheese Spread was a HUGE hit at our SUPER BOWL party last year. Ever since our friends and family expect me to bring this irresistible dip to every gathering. When I arrive, they ask, “You brought your Million Dollar Dip, didn’t you?” Taking over party hosting lets my husband focus on shouting coaching advice at the screen, so I play my role, and he can lend important advice to the players 🙂
When looking for an party appetizer one of the key requirements is that it is easy to assemble and often that it can be prepared in advance. No one wants to be stuck in the kitchen throughout their party, Right ? And while I was thinking of a perfect game day appetizer, the light bulb suddenly turns on and a brilliant idea comes out of nowhere, to take the dip we loved so much and turn it into these really amazingly tasty tortilla roll ups!
So…They’re easy. You can make ’em ahead. There’s nothing complicated about them.

They start with a few of the basics of the dip and cream cheese.
Then roll it all up, and the result, well….maybe one of my favorite party appetizers ever! Million Dollar Tortilla Roll Ups.
Million Dollar Tortilla Roll Ups
Ingredients
- 8 oz cream cheese whipped
- 1 cup of mayonnaise
- 2 cups cheddar cheese shredded
- 3 oz package real bacon bits or 1/2 cup cooked bacon crumbled
- 1/2 cup slivered almonds
- 5 green onions chopped
- 4 6 inch large flour tortillas
Instructions
- In large bowl, combine all ingredients except tortillas until well mixed.
- Lay a tortilla out on a plate and spread an even layer of the almond, bacon and cheese mixture all the way to the edges (about 2 to 3 tbsp).
- Roll up tortilla tightly and place on a plate and then repeat until all the ingredients have been used.
- Pop into the fridge to chill for 2 hour.
- Slice each rolled tortillas off the ends and set aside.
- Garnish with remaining sliced green onions.
- * - make sure your tortillas are at room temperature before you roll them so they are nice and flexible.
- * -Smaller tortillas may be used, however you will need to adjust the amount of bacon and cheese mixture you add to each tortilla.
- * -If time is an issue, you can skip the refrigeration before slicing or refrigerate for less time. However, for best results, refrigeration is recommended.

I enjoyed making the tortilla roll ups. I even forgot to put in the almonds as I was cooking dinner that evening and it was very hectic. Point is, they were still great and I am going to make them again for another Christmas party next week.
