津軽出身の作家・太宰治が好んで食べたという若生(わかおい)おにぎり。若生とは、薄く柔らかい1年もの昆布で、炊き立てのご飯を若生昆布で包んだだけのシンプルな軽食です。
一度食べたら忘れられない津軽ご当地グルメの若生おにぎりとぼんじゅそばを、五所川原駅前のでる・そーれで頂きました。
夫婦で行った青森県中心の東北三泊四日旅2023、初日の昼飯はここから。
私の注文は「ぼんじゅそば(冷)・若生おにぎりセット」880円。
そばは、挽きたて・打ちたて・茹でたての3たてが美味しい条件といいます。でも熟成製法の津軽そばの一種、竹鼻製麺所のぼんじゅそばは、3日間寝かせた軟らかい食感が特徴。細うどんのように軟らかく喉越しもいい。煮干しで出汁をとった素朴なかけそばが絶品なんです。
太宰治の妻・津島美知子さんは「回想の太宰治」でこう書いています。
「炊きたての飯をワカオイという薄い昆布の間にはさんで両掌でヒタヒタおさえて、プツっとワカオイをかみ切って食べるその歯ごたえ、自然の塩味、これが彼にとって最高の津軽風おむすびであった」
食べ方にもコツがあり、昆布の繊維に逆らうとかみ切れないので、縦に持つのが正しいんだって。若生で包んで二つ折りしているので、反対から見るとコロッケパンかハンバーガーのよう。
女房殿は「若生おにぎりセット(津鉄汁付き)」1100円。津鉄汁は「津軽鉄道沿線で育てられた地鶏青森シャモロックの旨味の強い出汁に、根菜、舞茸がたっぷり。もちもちした食感の長芋すいとんも好評です」。見た目は地味だが、津軽オールスターが揃ってます。
