Since our founding, we have been particular about homemade flour and clean water from Shirakawa-go, and we have supervised Soba Wakimoto, which aims to create unforgettable soba with carefully selected Gensoba, and Stonemilled Nihachi Soba, a flour mill that has been in business for over 60 years. . We mill our flour using a rare stone called antstone, which is almost impossible to quarry these days.
