Hatcho miso is carefully aged for two summers and two winters (more than two years) in the climate and environment of Hatcho Town. Kakukyuu maintains the traditional manufacturing method from the early Edo period, preserving the wooden barrel brewing and natural fermentation. From inside the store, you can see the wooden barrels in which Hatcho miso is aged. The conical stonework stacked on top of the wooden barrels is unique to Okazaki Hatcho miso. Even today, craftsmen stack them one by one by hand.
