Based on Italian flour, 2 to 3 types are blended depending on the climate and season. We have continued to make the dough with particular care, such as letting it rest well without stress and allowing it to ferment at room temperature for a long time. The pizza dough is baked in an Italian wood-fired oven that boasts an overwhelming amount of heat storage. In about 1 and a half minutes, the outside will be crispy and the inside will be chewy. We want you to enjoy its fluffy, light, and crisp texture!

We use a lever-type machine, which is the origin of espresso machines but which few baristas can handle, to provide the best cup of coffee that has been finely adjusted to suit the temperature and humidity! In addition to the proud espresso and cappuccino made by one of Japan's best baristas, we also recommend authentic Italian cafe menus that are not usually available, such as cafe macchiato and shakerato.
