A rare Izakaya (Japanese-style bar) in Otaru that specializes in Seafood Bowl and dashi broths that are open at night
In order to create the best dashi stock, the owner obtained qualifications as a "dashi sommelier" and has searched all over the country for ingredients with a good balance of umami components.
The soup
... stock made from these carefully selected ingredients has a well-balanced, full-bodied flavor, rather than one that stands out in particular. The soups that go with Ochazuke(boiled rice with tea)and Seafood Bowl are finished with this proud soup stock. There is also a wide selection of a la carte dishes such as fried chicken and Takoyaki with soup stock, and the extensive alcoholic beverage selection is also a plus.
