...to. Our specialty is our "tomato sauce," which is made with particular attention to the place of origin and the method of production. We use long tomatoes with thick flesh and rich umami ingredients, purchased from a contracted farmer in Foggia, Puglia, southern Italy. We harvest long tomatoes all at once in August when they are in season, and only those that meet our standards for acidity, color, shape, etc. are canned using a method that preserves freshness and shipped to Japan.
