Born in Kyoto in 1975, Kaji worked for a company after graduating from university, but a turning point came for him at the age of 27. He was struck by the beautiful figure of a chef behind the counter at a restaurant he visited, and, having always had an interest in food and drink, he decided to enter the world of craftsmen. After honing his skills at Gion Cuisine Toriimoto and Gion Nishikawa, he opened Muromachi Kaji in 2011. He serves unpretentious, original Japanese Japanese-style meal that makes the most of his reliable skills and unique sensibilities.

The "Otoshi Hassun" is a proud appetizer that is highly praised by the left-wingers, and is made by carefully selecting seasonal ingredients from the market, and is served in a variety of colorful dishes, including large plates, Small dish, and small dishes, with hot and cold dishes and different textures.
