Groundwater has supported the development of Kyoto's culture and food. *The unique topography of the Kyoto Basin, surrounded by mountains on three sides, produces high-quality water! Most of the water that flows through Japan is soft water, but Kyoto's groundwater has a low iron content and has a mellower, more delicate taste than other water.◎At our restaurant, we use the owner's own route to pump up groundwater from Sagano, Kyoto every day, and generously use it in our dishes.
