Chef-Daisuke Maruyama- Expressing the experience of breathing with nature in one dish
Born in 1991, from Ibaraki Prefecture. Since childhood, he has been collecting eels and rockfish from rivers, and wild vegetables and mushrooms from the mountains, and cooking them himself. Impressed by the vast natural potential of Nagano Prefecture and encountering apple firewood, he opened a store in Karuizawa Town, Nagano Prefecture. A sense of balance between ingredients cultivated through the cycles of nature x wood-fired grilling. All of the course items incorporate elements of firewood, but each dish has a different direction of aroma, so you can feel the depth of the woodfire.
