Tsukiji Aozora Sandaime, which boasts over 100 years of history in Tsukiji Market, has opened the much talked about hidden spot Makishi Shitamachi Yataimura! Young head chef Gima Tatsuki (24 years old
...), who trained at the main store, uses the same temperature-controlled, blended four types of vinegar as the current Tsukiji main store to create sushi rice that is matched to fish from Okinawa and the south. In addition to ingredients shipped directly from Toyosu, he also goes all the way to the fishing port to create Edomae sushi. Please enjoy the head chef's selection at the counter.
