Food Ramen Kuon's dishes ① Homemade hand-made aged multi-water noodles
The noodles are homemade using a hand-made noodle machine customized for our restaurant. These highly hydrated noodles have a unique texture, made with a proprietary blend of three types of domestic flour that have been tested over many trials and errors, and then aged under strict temperature control. As time passes, it will become more familiar with the soup, and you can enjoy watching the taste change! Please enjoy the taste that you will never get tired of till the last bite.

The soup takes time to extract flavor from Omi black chicken from Shiga Prefecture and iriko from multiple regions. The sauce is Marushima soy sauce shipped directly from Shodoshima Town. This is a traditional soy sauce that takes time to make by hand.

The rice used is Koshihikari rice grown in Omi. Drinking water and cooking water are ``π water'' called ``water of life.'' It is characterized by a well-balanced content of various minerals, high permeability, and a pleasant and mellow texture.
