I had Kyoto duck sukiyaki at a soba restaurant that is easily accessible and just a minute's walk from Shinbashi Station. A homely interior filled with the warmth of wood. The soba restaurant's duck hotpot is a Sukiyaki style hotpot made with the loin and thigh meat of Kyoto's famous duck, delivered directly from Kyoto! The duck meat has no unpleasant odor and is very tender. The sweet, melt-in-your-mouth fat melts into the broth, making it an excellent dish! The best green onion to go with this dish is the soft white green onion from Nagano Prefecture, which is so sweet that it can be eaten raw. The burdock is served long and thin like noodles, and the broth, which is infused with the aroma of burdock, is soaked into the fried tofu at the end, which is irresistible. I was so happy to be able to enjoy every last bit of the broth. Next time I'd like to try the handmade soba noodles made with Hokkaido buckwheat flour.
