The sign reads "Established in the first year of the Meiji era." Yes, Yawata Sushi has been in business here for over 140 years. You could even say it's part of the history of the town of Waseda. But
...there's no need to be uptight just because it has such a long history. When you pass through the noren, you'll be greeted by the fourth and fifth generation father and son. The fourth generation is a super veteran who has been making sushi for over 60 years. He has kept the Edomae techniques that have been cultivated over the restaurant's long history. Meanwhile, the fifth generation also keeps to tradition, but is an academic who continues to explore new forms of Edomae sushi. The fusion of these two creates the delicious flavors of Yawata Sushi.
