For 80 years, we have been selecting fish as ingredients at Toyosu Market, a huge fish market that gathers people from all over Japan and abroad. We purchase carefully selected materials that can only be achieved by being an intermediate wholesaler. Even the same fish has different tastes depending on the season and production area. We carefully assess the materials available at the time and purchase the best materials.
