Owner Kataoka was born in Kumamoto Prefecture in 1995. He began training as a chef at the Kaga cuisine restaurant "Asada" at the age of 19. From that time on, he became interested in Japanese Cuisine and at the tender age of 24, he opened "Japanese Cuisine Hakuya" in Kagurazaka, Tokyo, the center of food. He regards the entire course as one dish, and values the overall "balance" and the "purpose" of each dish. He is particular about not only the taste but also "food that tells you what you want to eat," and strives to express this on the plate.

As a cuisine born in Japan, where the beauty of the four seasons stands out, we use high-quality ingredients that are at the beginning, in season, and at the end of the season, in pursuit of dishes that allow you to feel the richness and seasons of Japan. The owner of the restaurant is from Kaga cuisine and the head chef is from Kyoto cuisine. The counter seats in the open kitchen where these two young chefs are at work are special seats where you can enjoy the food with all five senses, not just your taste buds, as you can smell the food and hear the sounds of the grilling and frying. The exterior of the restaurant overturns the image of a formal Japanese Cuisine restaurant, with the idea that the younger generation can enjoy Japanese Cuisine without hesitation. Enjoy your meal at the counter seat in the open kitchen, where you can enjoy the live atmosphere of the chef's cooking in the underground hideaway space.
