Chef[Chef Kensuke Okano] Italian cuisine with a South American twist
Born in Venezuela in 1981. He began his career as a chef under the tutelage of legendary chef Endo at Peperosso in Sangenjaya. After training at Trattoria Baffo in Ginza, he went to Italy. He spent four and a half years training at the Michelin-star restaurant Labaric in Turin, working as a second chef in the latter half of his career. After returning to Japan, he became the chef of Cascina Canamira before going independent and changing his name to unito in March 2024. Instagram account: okano2025
Food Fashionable Amuse
Based on Local Cuisine, he combines his knowledge and techniques of Italian cuisine with Japanese ingredients, and adds the essence of his native South America to create an Italian cuisine menu that changes every two months.
