ChefRyosuke Mogaki - A craftsman with outstanding attention to materials
Born in Kanagawa Prefecture in 1981, he started working in the food and beverage industry at the age of 17. After learning the basics of management and cooking, he went to Italy, where he honed his skills in restaurants and gelaterias around the country. In 2007, he opened an online gelato shop. He then went back to Italy, where he continued to work as a chef, working as a sous chef at a Michelin-star restaurant. After returning to Japan, he resumed online sales, and opened a shop in Yutenji in May 2012.

The ingredients are essential to making Gelato using simple techniques. For that reason, Shigegaki goes to great lengths to select the ingredients, even visiting the places where they are produced himself. In addition to seasonal Japanese ingredients such as plums and Japanese chestnuts, zabaione with a gorgeous wine-like alcoholic aroma, and milk-based olive oil, Soft serve ice cream is also available on weekends. The daily menu, full of ingenuity and creativity, is so varied that you'll want to come back often, and you'll find yourself smiling during this difficult yet happy time.

"Acquolina" has an impressive façade with a striped shade and a deep green sign. The store does not display any photos or illustrations of Gelato, and blends into the peaceful streets of Yutenji. The store also features Italian furnishings, such as the heavy brass door logo and ceramic shade lamps, each with a different design. The small store, packed with Shigegaki's attention to detail, is a space that makes you want to imagine the scenery of Italy while enjoying the fleeting taste of Gelato.
