→歯応えあるクエは一貫目にもってこい!
③宮城県気仙沼市のカツオ(3日熟成)
→タレが染みていて最高ですよ❗️
④京都の村上農園、とうもろこし
→糖度18度のとうもろこしはメロンより甘い
⑤真鯛(巣立ちを添えて)
→巣立ちを添えてさっぱり歯応えもあって最高!
⑥マグロのハガシ
→とろとろのユッケのようで、歯が不要!

熟成したネタは、基本的に「超絶柔らかく」
利他さんのシャリは、「赤酢で硬め」
柔らかい舌触りから、しっかりとしたシャリが
毎度毎度インパクトを与えてくれる15品でした!
特に、2種のマグロはとろけすぎて
他にはない感動を貰えました❗️
