特に12月の上海蟹のスペシャルコースの貴重な席✨
ずっと行ってみたかったお店のお誘い(*゚∀゚*)アザーッス
ディナーは18時開始の一回転のみの営業
テーブル席・カウンター席があるが コロナ影響により
1組2人・1日2組のみしか予約が取れない超狭き門
人気なのに この組数・席数となると予約困難も頷ける
今回初めてだったが 下調べではスパイス料理との記載
カウンターにはスパイスカレー店のようにスパイスが並ぶ
そして化学調味料などの添加物を一切使用しないとの事
当日の料理が和紙に記載されており高級和食店のよう
カウンター席に座っていると 調理される様子も見えて

まずは枸杞ならではの七十二侯のお迎えのお茶から
寒い時期ならではの温かいお茶には生姜が強く感じるが
氷砂糖で甘く仕上げてありハーブの効いた飴湯のよう
甘みを強く感じるが氷砂糖だから後味はスッと消え去る
このお茶を飲んでいるとスパイスよりもハーブが多彩
料理にもハーブが使用されていると予想したが この後に
提供される料理のスパイスの効かせ方にカラダが反応
前菜の10種盛り合わせは丁寧な仕込みを感じる優しさ
化学調味料などを一切使用せず 素材の旨みを活かした味
簡単には言えるが仕込みに時間が掛かる手法の料理を
1つ1つ丁寧に仕上げた心のこもった料理で何れも絶品
ピリッとした刺激を感じるが甘み同様に直ぐに消え失せ
食べ進むとスパイスが調和しカラダに働きかける
舌で感じる美味しさと同時進行でカラダも反応する料理
血流が良くなり 旨みを強く感じる中でメインを迎える
メインは上海蟹のオスの白子・メスの内子の食べ比べ
ギッシリと詰まった身を食べやすく解してくれていて
容易に食べる事が出来て オス・メスの違いが楽しい
メスの内子・オスの白子と濃厚な蟹味噌まで渾然一体
しっかり食感の身には旨みが凝縮されてて( ゚Д゚)ウマー
ほんの一欠片で紹興酒が1杯飲めちゃう最高のアテ
上海蟹は〆ご飯にも解してもらえてとことん堪能❤️
奈良地元の食材・自家菜園で育てた野菜などに拘るが
食材よりスパイス・ハーブの効かせ方が素晴らしい印象
めくるめく絶品料理を食べ進むうちにスパイスが調和し
指先までジンジン温まって帰りは極寒の外気でもポカポカ
医食同源との言葉があるが カラダが美味しいと感じると
舌で味わうよりも高い満足度が得られましたよ(^ω^*)
