I love a good cookie recipe and one that uses cake mix? Even better! Today I’m sharing with you how I made these yummy, soft and ewey, gooey chocolatey Chocolate Mint Cream Cheese Cake Mix Cookies! All things for the cookies were things I had on hand! Don’t have chocolate cake mix? Substitute vanilla or yellow and instead of mint chips add chocolate chips or caramel. The best part about these cookies is all the options you have for making different varieties! So since I had chocolate and mint, that’s what I ran with!

The recipe is a simple cake mix mixed with cream cheese and a few other ingredients for a deliciously EASY cookie! Make them now for Christmas and freeze the dough! OR give them to coworkers for gifts!! So many options!!

Chocolate Mint Cake Mix Cookies

Print Recipe

Ingredients

1 box of chocolate cake mix
8 oz. cream cheese softened
1/4 cup of butter
1 egg
1 tsp. vanilla
1 cup Andes Mint Chips

Instructions

Mix all ingredients together (dough will be VERY thick).
Preheat oven to 375 degrees.
Scoop dough into rounded tablespoons and bake on ungreased cookie sheet for 10-12 minutes.
Let cool and enjoy!
