This delicious and easy peanut brittle recipe is a holiday tradition in our family.
It’s so easy to make, and is probably our most quickly disappearing holiday treat!
It includes only a few simple ingredients, but creates the perfect combination of salty/sweet candy crunch.
I’m sure you’re busy too, so I’ll spare you an more commentary and hit you with the recipe directly below! 😉

Peanut Brittle Recipe
- 2 Cups Sugar
- 1 Cup White Karo Syrup
- 1/4 tsp Salt
- 2 Cups Raw Spanish Peanuts
- 2 Tbs Butter
- 2 Tsp Soda
- 2 Tsp Vanilla Extract

In a large stock pot, bring sugar, karo syrup, and salt to a boil, stirring frequently

Add raw peanuts and continue to boil until the sugar mixture darkens to a golden brown color (10-15 minutes)

Lightly grease 2 large baking sheets

Cut the heat, add butter, soda, and vanilla and stir rapidly.

Quickly pour the hot candy mixture onto the greased baking sheets

Spread out with a spoon or spatula and let it cool.

When cooled, break the mixture into small pieces with a hard utensil and enjoy!
Easy Peanut Brittle Recipe Run Down
This easy peanut brittle recipe starts with melting sugar and syrup together until hot and bubbly!
I usually cook this on medium/high heat.
This recipe is one you need to watch and stir.
While it doesn’t take long, it can burn quickly if unattended!
Shortly after your mixture begins to bubble, you will add the raw spanish peanuts.
Do not substitute any other roasted snacking peanuts.
They will quickly burn in the boiling candy mixture!
After you have added the sugars, salt, and peanuts you will stand and stir for 10-15 minutes (depending upon your cooking heat).
I usually find raw spanish peanuts next to the other raw or shelled nuts in the produce section of my grocery store!
The mixture will start to bubble and thicken slightly.
It will also start to turn a light caramel brown color.
This is when you will need to act quickly!
You will immediately reduce the heat to low, and add the butter, soda and vanilla.
This will cause the candy mixture to fizz and foam up.
Quickly incorporate these ingredients and then promptly (and carefully) pour the mixture onto lightly greased baking sheets.
The candy will spread out so leave extra room on the pan for it to expand.
Lightly spread out the mixture while it’s still warm to as thin as possible.
Once it is cooled, I separate it from the pan with a metal spatula, and break it into bit sized pieces.
This peanut brittle recipe is SO addicting!
The bowl that sits on our counter at Christmas always needs replenished a couple of times throughout the holiday weekend.
