Air frying vegetables can result in some pretty impressive results, like these delicious vegan baked potatoes.
The skin is super crispy, and the inside is fluffy and delicious. Just like my air fried carrots and squash, you can expect a perfectly textured veggie!

What kind of potatoes to use
My preference is russet potatoes for the BEST baked potato.
Their high starch content makes the inside super fluffy and soft, but since the skin doesn’t hold moisture well, you end up with a super crispy exterior.

Here’s all you’ll need for this delicious air fryer baked potato recipe.

Scrub your potatoes from dirt, and then sprinkle them with the seasoning on all sides, as evenly as possible.
Place them in your fryer basket and air fry for 35-45 minutes. Flip them halfway so the skin doesn’t burn.
NOTES: Pierce a few poke holes with a sharp knife or fork into your potatoes before cooking, so they don’t burst. Cook time will vary according to potato size and your model of air fryer. Once easily pierced with a fork, they’re ready.
Serve warm with all of your favourite toppings.
Serving suggestions
Use a paring knife to slice open the baked potato and stuff it with your favourite toppings. Here are some great options:
- Butter or olive oil (if you’re not avoiding oil or saturated fat).
- These delicious candied vegan bacon bits.
- Chili or black beans, with some salsa on top.
- Sour cream, guacamole, or cheese sauce.
- Chives, green onion, parsley, or cilantro.
- Serve with a side of broccoli, mushrooms, and/or cauliflower steak.
Storage
If you have leftovers, keep them in an airtight container in your refrigerator for 3-4 days. You may reheat in the microwave, air fryer basket, oven, or toaster oven.
Equipment
I use and love a Ninja Foodi 8qt, but you can make baked potatoes in virtually any model.
Since different models and sizes of fryers cook faster or take longer, always start checking on your baked potato around the 30 minute mark.
Can I make it in the oven?
Yes of course! If you have yet to join the world of air frying, you can make these baked potatoes in your oven instead.
Follow the same directions and temperature, season as desired, and bake until a fork easily pierces your potato.
Expert Tips
- Poke a few holes in your potatoes using a fork or knife all around before popping them into your frying basket. Although it doesn’t happen every time, the potatoes CAN explode from the steam build-up.
- Season as desired. We like salt, pepper, and garlic powder, but feel free to sub or omit any seasonings to your taste.
- Cook time will vary according to the size of your russet potatoes, how many you’re cooking at once, and the fryer model you’re using. When a fork pierces easily through your potato, it’s ready.

Instructions
- Rinse and scrub your potatoes clean, poke a few holes with a fork or knife all around and then sprinkle them evenly with the seasoning on all sides. Place inside your fryer basket.
- Air fry at 400 degrees F for 35-45 minutes, flipping them over around the 20 minute mark. (Use tongs to flip them.)
- Serve warm with any of your favourite toppings.
