Strawberry Spring Greens Salad

Sweet and bright, this makes a great entry-level salad for children (and salad-reluctant adults).

Strawberry Spring Greens Salad

In a small bowl or jar, whisk together:

  • 1 tablespoon sesame seeds
  • 2 teaspoons poppy seeds
  • 1-2 tablespoons white sugar
  • 2 tablespoons olive oil
  • 1 tablespoon white vinegar
  • Sprinkling of paprika
  • 1 teaspoon minced onion

Cover and chill for an hour (if you have the time).

In a large bowl, mix:

  • 5 ounces spinach and/or other salad greens (washed)
  • 2 cups sliced strawberries (rinse them first, and cut off stems)
  • 2 tablespoons slivered or sliced almonds

Pour dressing over salad greens mix and toss. Refrigerate 10-15 minutes before serving.

Serves 3-4.

Kid Tips: 

Ask kids to eat at least 2-3 lettuce leaves with their strawberries. The sweetness and brightness of the dressing make the greens more attractive.
