Sweet and bright, this makes a great entry-level salad for children (and salad-reluctant adults).
Strawberry Spring Greens Salad
In a small bowl or jar, whisk together:
- 1 tablespoon sesame seeds
- 2 teaspoons poppy seeds
- 1-2 tablespoons white sugar
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
- Sprinkling of paprika
- 1 teaspoon minced onion
Cover and chill for an hour (if you have the time).
In a large bowl, mix:
- 5 ounces spinach and/or other salad greens (washed)
- 2 cups sliced strawberries (rinse them first, and cut off stems)
- 2 tablespoons slivered or sliced almonds
Pour dressing over salad greens mix and toss. Refrigerate 10-15 minutes before serving.
Serves 3-4.
Kid Tips:
Ask kids to eat at least 2-3 lettuce leaves with their strawberries. The sweetness and brightness of the dressing make the greens more attractive.
