Carrot Cake Cookies For Easter

Happy new week, friends! Here’s another delicious treat for Easter.

This is a variation of my carrot cake cookie recipe. This time I used only desiccated coconut and no oats to make them, and I added some tahini and grated apple. This makes the recipe perfect for someone who eats gluten-free or paleo. The cookies turned out super soft, moist and delicious. You can find the original recipe on my blog.

  2. They look delicious. I had never thought of creating a cookie with carrot like this but it looks like it would be satisfying and healthy too.

    • Thank you very much! Until recently, I wasn’t imagining that I’d love desserts with carrots, but they turned out to be delicious.
