Paul Fleming is one of the restaurant industry’s most creative concept developers. Fleming is responsible for many critically acclaimed restaurants including Ruth's Chris Steak House, P.F. Chang's China Bistro, Fleming's Prime Steakhouse & Wine Bar, Pei Wei Asian Diner, Z’Tejas Grills and Paul Martin's American Grill.[1]

A businessman with a degree in Criminal Justice from Loyola University in New Orleans, Fleming spent nine years in the oil and gas leasing industry before pursuing his passion for restaurant concept development.[2]

Early life

Fleming’s love and appreciation for food was fostered at young age. As a native of Louisiana, Fleming’s life revolved around food, specifically fresh food, as he was growing up. Fleming’s grandfather was a farmer that raised his own livestock such as chicken and squab. Fleming and his family spent lots of timefishing and eating foods as they appeared seasonally. As grew up, he learned the huge role food played in Louisiana’s culture. 

Fleming graduated with adegree in Criminal Justice from Loyola University in New Orleans, Louisiana. He had his first job in the restaurant industry at a local restaurant, Saturday’s. He began as a dishwasher and progressed to become a busboy, server, bartender,and top position, manager.[3]

Career

Fleming began his career with nine years in the gas leasing and oil industry where he gained work experience and cultivated his business knowledge. Finding the restaurant industry appealing and already having a love for food, Fleming made his career move to the restaurant industry in the 1980s. He began seeking out restaurant franchises that he could invest in and eventually decided on Ruth’s Chris Steakhouse as a solid investment. After gaining the rights for development in Arizona, California, and Hawaii, Fleming opened his first Ruth’s Chris Steakhouse restaurant in 1984 in Beverly Hills, California. After successfully operating for 12 years, he sold his Ruth’s Chris Steakhouse interests.[4]

He forged ahead down anew path – restaurant concept development. He bought out Z’Tejas SouthwesternGrill and conceptualized P.F. Chang’s China Bistro. His partnership with Philip Chiang ensured that P.F. Chang’s was a hit. It first opened in Scottsdale, Arizona in 1993 and rapidly expanded to the empire it is today. He then conceptualized Pei Wei Asian Diner, a quick-service offshoot of P.F. Chang’s.[5] His next large project was in conjunction with fellow restaurateur, Bill Allen. In 1998, Fleming’s Prime Steakhouse & Wine Bar opened in Newport Beach, California as a joint venture with Outback Steakhouse, Inc.[6] Fleming’s is built for lovers of food and wine with its nationally renowned cuisine and offering of 100 wines. Fleming’s Prime Steakhouse & Wine Barnow has 25 locations in 14 different states.  In 2004, Fleming returned introducing another joint venture with Outback Steakhouse called Paul Lee’s.[7] While these restaurants are no longer in operation, they boasted tasty Chinese favorites served in a family-friendly setting.
