OF COURSE, YOU CAN PURCHASE NAAN FROM ANY GROCERY …BUT… NOT GLUTEN FREE…. This is fun to make and yummy to eat and another treat for the G.F. crowd. The only thing you may not have is a cast iron pan and this is best for the frying of Naan. FRYING???? Not deep fried, but placed on the cast iron skillet with a light coating of Ghee as oil. (coconut oil can be used or this as well) There is rising time involved, so start this 3-4 hours before you need it. The mixture can also be stored in the frig. and fried as you need it. I plan to do this with my small group tonight. Their job will be dividing the mix into little balls…flatten into an oval and fry. I am giving this a 4 spoon rating due to prep time. ENJOY!!!!!

In a mixer:
Mix together till blended:
2 1/2 c. gluten free flour
1 1/4 tsp. xanthum gum (omit this if your flour contains this ingredient)
1/2 tsp. sea salt
1/4 tsp. cream of tarter
4 1/2 tsp sugar
ADD:
2 1/4 tsp. instant yeast ( 1 packet)
1/3 c. plain yogurt ( room temp)
3 TBL. butter (Ghee) melted and cooled
1 egg (I used substitution: 1 TBL. ground Flax and 3 TBL. water per egg)
3/4 c. warm water
**Mix for 3 minutes at medium speed
Transfer mixture to greased bowl and cover with clean tea towel. Let this rise to double in size… (at least 90 minutes-2 hours) Flour a clean surface, separate into balls…flatten to make an oval 3/8 inch thick…
CAST IRON SKILLET
HEAT.. use 1 TBL. Ghee or coconut oil ..add more Ghee or coconut oil as needed for remaining ovals.
Fry until large blisters form ( 30 seconds). Flip and fry until golden brown..flip and go for the golden brown both sides… Remove to a plate covered with a paper towel..cover with tea towel and serve warm.
