This is a bit of a 'Bush Tucker' recipe - and just goes to show that you can probably make jam from any fruit at all! Beach Cherry is also known as Cedar Bay Cherry and the botanical name is Eugenia reinwardtiana. The bushes are common along the north Queensland coast and are available from nurseries and often grown as an ornamental hedge. The berries start off orange and are best eaten when they go red. The jam can be made from most red and some orange berries. This jam is not much more fiddly to make than rosella jam and well worth the effort.

Ingredients
About 500g ripe berries.
About 300g sugar
1 lemon
Method
Collect your cherries as they ripen and remove the calyx with a sharp knife. Freeze the fruit until you have enough to make jam.
When you have enough fruit, put them in a saucepan with the juice of a lemon and cover well with cold water. Bring to the boil and boil for about 45 minutes.
Allow to cool, then remove the seeds. The easiest way to do this is to put on a pair of foodsafe gloves, and just squeeze out the seeds, discarding them and keeping the fruit in the saucepan.
Add the sugar, it doesn't need to be cup for cup. Bring it back to the boil and boil for another 20 minutes.
Test if it's set by spooning a little onto a cold saucer. If the skin goes wrinkly then it's ready.
