August 2024 Ratings & Reviews 252 see all Deviled Eggs 09/14/2021 I'm surprised to find myself giving 5 stars to a fairly standard deviled egg recipe, but there is something about the balance of sweet and acid in this that is just right. I consider the amount of salt to be personal taste, and for us a pinch is enough in this. I have also added a few drops of sriracha to this recipe, and love it even more. I used Chef John's method for hard-cooked eggs, letting my extra-large eggs set for 11 minutes after bringing to the full boil. It was still very nice with dried seasonings and no tomatoes. I’m sure it will be even better next time, when I’ve planned ahead. I did cut the butter in half, and didn’t miss it. Helpful (0) Homemade Flour Tortillas 03/07/2021 I was so disappointed with this recipe. It’s great that so many people loved their modifications and called it a 5 star, but I made it exactly as written. First of all, I was counting on 12 normal 8” sized tortillas from half a recipe, but these were only 4”-5” wide, made with a high quality tortilla press. I had to serve my refried beans on the plate with tortillas on the side because there was no way to make burritos with these. The baking powder creates a porous texture that reminds me more of a naan bread rather than tortilla. I’m looking for a recipe that yields a soft, stretchy tortilla to wrap around all kinds of fillings. Helpful (0) Chocolate Glaze I 02/28/2021 I will attempt this again because of all the positive reviews, but felt I should post my one star experience with the microwave version in case it might help someone else. I followed the MW instructions to melt the chocolate first. When I stirred in the butter, the chocolate immediately hardened. I then tried to remelt the chocolate a few seconds on half power but the butter separated out. I added the corn syrup, thinking it would bring it together, but it turned into a glob floating in butter. After much beating, I ended up with a taffy-like consistency still floating in butter. I rolled it into a log and wrapped it in a paper towel to absorb the butter because my grandkids didn’t want me to throw it out. The resulting slices weren’t great.
